Warm Middle Eastern Salad

This yummy Middle Eastern salad uses za’tar to give the vegetables some va va voom. The Middle Eastern za’tar spice mix has a unique aromatic taste that tingles the taste buds. Topped with tahini and mint, this vegetable salad has warm but fresh taste all at the same time. Not only is this recipe bursting with flavour, it is also packed with minerals and vitamins. A healthy and delicious salad that can be enjoyed at any time of the day or year.

Serves four people


  • 1/2 x cauliflower head broken up into smaller florets
  • 2 x organic carrots chopped finely
  • 2 x organic parsnips chopped finely
  • 4 x large kale leaves
  • 2 x teaspoons of Za’tar spice mix
  • Extra-virgin olive oil
  • Tahini
  • Mint
  • Pumpkin seeds


  1. Place the cauliflower, carrots and parsnips in a large bowl
  2. Add four tablespoons of olive oil and two teaspoons of za’tar in the bowl and mix
  3. Pop the veggies into a convection oven at 180 degrees for 20 minutes
  4. Whilst the veggies are roasting, pop the kale leaves into boiling water and blanche for 3-5 minutes
  5. Once the veggies are ready, place them on top of the kale leaves and top with two tablespoons of tahini, chopped mint and a sprinkle of pumpkin seeds
