Mediterranean Cauliflower Rice

Cauliflower rice is a great alternative to everyday rice. It is a good source of carbohydrate, calcium and magnesium and is a fantastic antioxidant. So easy to use, cauliflower rice is a versatile source of carbohydrate that can be enjoyed all year round.

This dish is one of our favourites. It takes less than 15 minutes to make and is bursting with mediterranean flavours. 

Serves 2 people

Ingredients

  • 2 x cups of grated cauliflower
  • 1/4 of a white onion chopped finely
  • 1 x cup of frozen peas
  • 1 x cup of cherry tomatoes chopped
  • 3 x tablespoons of crumbled feta cheese
  • 2 x tablespoons of finely chopped basil
  • Extra-virgin olive oil
  • Sea salt and pepper

Directions

  1. Sautee the chopped onion in extra-virgin olive oil, sea salt and pepper until soft
  2. Add the cauliflower, frozen peas and tomatoes and stir through for 5-10 mins
  3. Once the peas are cooked and the cauliflower is warm, place into serving bowls
  4. Top the cauliflower rice with crumbled feta and basil
  5. Season with some black pepper
